You'd be in for a long wait. There's always something Exo decides to add or something that needs fixing.
2.81 vanilla broke joystick support, PC speaker sound and a lot of other things, but then again it's because Exophase did massive overhauls to the code. Large changes beget large possiblity of error. 2.81 added tons of functionality. 2.81b is much better, even despite another similar coding overhaul, and perfectly useable despite minor caveats already fixed in the 2.81c alphas. 2.81c should patch nearly everything up.
Don't be like Es and get pointlessly behind several versions when something stable is out. Run it; if it is "unstable", point out WHY and stop griping. You'll help instead of giving Exo and people like me an aneurysm, and any possible major world-building problems will be quashed through simple backup.
